Risotto with strawberries

Strawberry risotto is a first course that was very popular in the ’80s, a period that saw more and less well-known chefs try their hand at offering unconventional dishes, with combinations that might seem a bit risky.

After the 1980s, strawberry risotto went out of fashion, only to return in vogue in recent years. The strawberry risotto, in fact, is an elegant and sophisticated dish, especially ideal for a romantic dinner. For this reason, it is one of the typical dishes of Valentine’s Day.

Plus, it’s also good for your health! In fact, strawberries have several beneficial properties: they prevent cellulite, keep the skin young …. and they are also aphrodisiacs!
The ideal accompaniment for this risotto? Obviously the Champagne!

Ingredients (for 4 people)

  • 350 g risotto rice
  • 300 g of strawberries
  • 80 g of butter
  • 2 glasses of dry white wine
  • 1 onion
  • broth q.s.
  • salt to taste
  • white pepper to taste

How to make italian risotto with strawberries

  1. In a pan, lightly brown half the butter required for the recipe and the finely chopped onion
  2. Add the rice and, stirring, add the wine and let it evaporate
  3. Wet the rice with the broth as it is absorbed, cook in about fourteen to fifteen minutes
  4. Set aside some whole strawberries to use as a garnish; mash the others and add them to the risotto halfway through cooking. When it is almost ready, season with salt and pepper
  5. Serve the risotto garnished with the whole strawberries
